A delightful dinner with Daud


You know how an idea can just grow legs?

Last Thursday, E stopped at the store before she went to class (a new phase in her life--she's going back to school at the college she graduated from 7 years ago--six blocks from my job!) and I asked what she'd like for dinner.

We talked of this and that, until I said I had pork ribs and sauerkraut at home. The joke has always been about how colorless that combination is...lol
Eventually, laughing all the way, the menu became:
boiled pork
sauerkraut
boiled potatoes
cottage cheese
milk
and tapioca pudding

It was delicious!

    Boiled dinner requires that you have a smoked butt. Not that you personally have one (that would be a little more info about you than I'd really care to have anyhow) but that you get one from the store. Then you boil it with potatoes and onions and carrots until they're done. Grammie also put in some gecky yellow vegetable like rutabagas or something. It works just fine to leave it out. It doesn't really need much salt cuz of the smoked butt. When it's almost time for dinner, cut a small head of cabbage into eighths or so and put the pieces on top of the boiled stuff. (This assumes that you left enough room in the pot for a whole head of cabbage.) Put the cover on and let it cook for 15-20 minutes or so - just enough to sort of steam the cabbage but not enough to cook it to death. That will be accomplished soon enough by reheating the leftovers. And there WILL be leftovers - this stuff grows. It's really good when the weather is cold and it's the first time you make it. Two or three days later it's less charming. BTW, a feller could make this in a crockpot like if she was going to be in school all day or something. Then all you gotsa do is put the cabbage in for a half hour or so when you get home. OK? Love hees munch -
